Enjoy this delicious and sweet Quinoa Salad as a side or a Lunchtime meal!
Serves 4-6 / 15 Minute Prep Time / 15 Minute Cook Time
Ingredients
- 1 cup Quinoa
- 1 ½ cups arugula
- ½ cup sliced cherry tomatoes
- ½ cup canned or fresh mandarin slices
- ¼ cup feta to sprinkle on top
- Balsamic dressing to taste
Directions

- Boil 4 cups water. Add Quinoa and simmer for 12-15 minutes. Drain under cold water and then let quinoa cool in fridge for 10-15 minutes.
- In a large bowl, mix Quinoa, arugula, tomatoes and mandarins.
- Mix in balsamic dressing.
- Top with feta cheese.
