Sweet Mandarin Quinoa Salad

Enjoy this delicious and sweet Quinoa Salad as a side or a Lunchtime meal!

Serves 4-6  /  15 Minute Prep Time  /  15 Minute Cook Time


  • 1 cup Quinoa
  • 1 ½ cups arugula
  • ½ cup sliced cherry tomatoes
  • ½ cup canned or fresh mandarin slices
  • ¼ cup feta to sprinkle on top
  • Balsamic dressing to taste


    1. Boil 4 cups water. Add Quinoa and simmer for 12-15 minutes. Drain under cold water and then let quinoa cool in fridge for 10-15 minutes.
    2. In a large bowl, mix Quinoa, arugula, tomatoes and mandarins.
    3. Mix in balsamic dressing.
    4. Top with feta cheese.
